BAKED RABBIT AND DRESSING





1 rabbit, cut up


1 can cream of mushroom soup





DRESSING:





1/3 c. butter


1/4 c. minced onion


1 tsp. salt


4 c. coarse bread crumbs


1/4 tsp. pepper


1/2 tsp. sage


1/2 c. chopped celery





Melt butter in heavy skillet. Add onion and celery and cook until yellow. Add some bread crumbs. Heat, stirring to prevent excessive browning. Turn into a deep bowl and mix in remaining ingredients.





Roll rabbit pieces in flour and brown in frying pan. Place in bottom of greased baking dish. Cover rabbit with dressing and pour soup (diluted with 1/3 cup water) over dressing. Bake, covered at 325 degrees for 2 hours. 6 servings.





BAKED RABBIT IN SOUR CREAM





1 rabbit, cut in serving pieces


1 1/2 c. sour cream


3 tbsp. flour


3/4 tsp. salt


3/4 tsp. paprika


Dash of white pepper


6-8 tbsp. milk


Paprika





Wash and dry the rabbit pieces. Cook in salted water until tender. Drain and place in suitable baking dish. Mix sour cream, flour, salt, paprika and white pepper together. Add enough milk to make mixture pourable. Pour over rabbit. Bake at 350 degrees for 45-60 minutes or until tender.

500g oven-ready rabbit, cut into pieces


2 tablespoons plain flour

50g butter


2 onions, thinly sliced


120ml soured cream

Coat the rabbit with the flour seasoned with salt, pepper and paprika. Heat the butter in a heavy flameproof casserole and brown the pieces well on all sides. Add the onions and cream to the casserole, stir to mix in the brown bits and cover tightly. Cook in a preheated cool oven (160C / 325F or Gas Mark 3) for about 1 1/2 hours, or until the rabbit is tender.

*****RABBIT WITH TWO MUSTARDS AND CREAM


One rabbit


2 tablespoons olive oil


2 ozs butter


Seasoned flour


Piece of fat bacon diced or 录lb of fat back rashers


4 large or 6 small shallots


陆 pint double cream


2 teaspoons Dijon mustard


1 really heaped teaspoon dry English mustard powder


2 bayleaves, 3 sprigs of thyme, 3 stalks of parsley tied together as a bouquet garni

录 pint dry white wine


Cut up the rabbit (unless you get the butcher to do it). This will give you the four legs, the rib cage and the saddle which is best cut into two portions (or even three). The floppy belly bits can be trimmed off and used for stock. To do a really good job do not just take off the saddle the skin but the very thin under skin, but do not spend too much time on that if in a hurry. It is a counsel of perfection.Flour the rabbit pieces and fry together with the bacon on all sides in the olive oil and butter.


In the meantime chop the shallots, prepare the bouquet garni, add these, the stock and the wine, bring briefly up to a fierce bubbling, then turn down to simmer on top of the stove with the lid on the pan, or put in the oven at 175掳C (Gas Mk3 or 325掳).Cook until the rabbit is tender - about 2-2陆 hours. Check during cooking to make sure it is not drying out. If needs be, add a little boiling water.


When the rabbit is done remove it from the pan and keep warm. Take off any excess fat from the casserole, then thoroughly mix the two mustards into the cream, add to the juices in the casserole and let warm through.Then bring back the rabbit, put into the casserole, make sure it is all thoroughly warmed through and serve.


NOTE----I think this goes well with mashed or creamed potatoes and celeriac and some steamed young carrots.
