You are right, you should never lift a rabbit by its ears. This is very cruel, as the cartilage of a rabbit's ears is very delicate, and you could easily do a lot of damage by lifting the ears. Not to mention it would cause your rabbit a lot of unneccessary pain!
There are certain handling techniques, however, which require the use of the rabbit's ears. It should be noted, though, that the rabbit is not LIFTED by the ears. You only use the ears to CONTROL the rabbit while you SUPPORT the rabbit by the rump.

Seriously, lifting a rabbit (or any other animal) by the ears is extremely painful and could cause serious injury.
The proper way to pick up a rabbit would be either:
Lifting it by the scruff, whilst fully supporting its rump with the other hand (so you are taking the weight - not dangiling the rabbit by the scruff).
Or with smaller rabbits you can lift them with hand hand round and under the chest, with the other supporting the rump.
Uhm.. I wouldn't suggest holding a rabbit by it's ears. That's kinda cruel. Whoever told you that is mot-likely incorrect, although i'm not completely saying no. I just don't suggest it.
The only time it is proper to hold a rabbit by the ears is when you are extracting one from a hat.
